grate the ginger and chop the rosemary needles. Put in a pan together with the orange juice and berries
slowly bring to a boil, while you stir frequently. Let it simmer for 15 to 20 minutes. Mash the berries a little bit during this process. Don't forget to stir frequently.
take off the heat and put through a food mill, or if you do not have any press it through a sieve
put back in the pan, add the honey and bring to a boil while continuously stirring. Let it simmer for 5 to 10 minutes or until it starts to foam lightly
keep in a sterilised glass jar in the refrigerator
