delicious home made jam using sea buckthorn berries, ginger, orange juice and rosemary. Free of refined sugar!

Ingredients

  • 200 gr sea buckthorn berries
  • 10 gr fresh ginger
  • 50 ml fresh orange juice
  • 1 sprig rosemary
  • 100 gr honey

Instructions

  1. grate the ginger and chop the rosemary needles. Put in a pan together with the orange juice and berries

  2. slowly bring to a boil, while you stir frequently. Let it simmer for 15 to 20 minutes. Mash the berries a little bit during this process. Don't forget to stir frequently.

  3. take off the heat and put through a food mill, or if you do not have any press it through a sieve

  4. put back in the pan, add the honey and bring to a boil while continuously stirring. Let it simmer for 5 to 10 minutes or until it starts to foam lightly

  5. keep in a sterilised glass jar in the refrigerator
