With my home grown radishes I had to make something from one of The Green Kitchen cookbooks. In The Greenkitchen Travels, which is lovely book with food inspiration from all over the world, I found this sweet Vietnames cucumber salad, with radish!
It could not have been better, especially because I had almost all the ingredients already at home. A great way to serve my lovely baby radishes. Oh man, what a happiness can come from growing your own food! Did I already mention my home grown rocket??? Wow, what a flavour and what a structure. I have to grow much more to keep up with our speed of eating 😉
The salad is pretty much the same as the one in The Green Kitchen Travels. I used rocket instead of pea sprouts, that is about it.
Ingredients
- 1/2 cucumber
- 3 radishes
- 1 handful rocket
- 1/4 red chilipepper
- 3 sprigs fresh coriander
- 1/2 tsp sesame seeds
- 1/2 tsp black sesame seeds
dressing
- 1/2 tbsp lime juice
- 1/2 tsp sesame oil
- 1/2 tsp honey raw
Instructions

thinly slice the radishes, cut the cucumber in half and remove the seeds, then cut in 3 to 4 mm slices. Remove seeds and membranes from the chili and chop very fine

for the dressing: mix the ingredients together and whisk

for salad: mix the ingredients and carefully mix with your hands. keep a little bit of the sesame seeds aside. then add the dressing and mix again. Garnish with the remaining sesame seeds

for a vegan version replace the honey with maple syrup

Weer zo’n mooi plaatje! Nog even wachten en ik kan dit frisse gerechtje grotendeels met ingrediënten uit de moestuin maken 🙂
wat ontzettend leuk! (ik ook trouwens!) de komkommers staan bij mij nog binnen dus dat gaat nog even duren 😉
