Ever since I have The Green Kitchen cookbooks and spring has arrived, I love cooking even more than I already did. I am really in the mood for trying new vegetarian dishes. Mostly I create the recipes myself, but trying the recipes from David and Luise is a true treat, as they really master creating good food!
What I really like is their obsession with lemon, that is something we truly have in common. Lemon goes with almost everything. If you taste a dish and you think… yeah it is OK, but it lacks something… the answer is 9 out of 10 times LEMON!
Going through their book The Green Kitchen my eye caught their recipe for courgette rolls filled with passionfruit & lemon ricotta. It could not have been a better match as my dear friend Christa just brought me some delicious yellow passionfruits from Peru. What a coincidence! And what a great dish for spring! And it does not only taste nice, it looks also incredibly nice!
As always, I have changes bits and pieces of the recipe, but it stays very close to the original one.
courgette rolls filled with passionfruit & lemon ricotta
beautiful grilled courgette rolls filled with a mixture of passionfruit, lemon, ricotta and basil
Ingredients
- 1 courgette approx. 300 gr
- 125 gr ricotta
- 60 gr passionfruit
- 2 sprigs basil leaves only
- 1 tsp lemon zest
- 1/2 tsp agave syrup
- pepper
- salt
Instructions

slice the courgette in 6 length wise. Put them in a large colander, sprinkle with salt and toss well. Set aside to drain for 30 minutes. Ones ready, rinse well withe cold water.

in the meantime prepare the filling. Juice the lemon, roughly chop the basil leaves and remove the seeds and pulp for the passion fruit. Mix together with the ricotta and agave syrup and season with pepper and salt. Keep a bit of the passionfruit aside for garnishing. Set the mixture aside in the fridge

put the courgette slices on a clean tea towel or kitchen paper and pat dry. Then brush both sides with a little bit of olive oil

heat a grill pan on a medium heat. Grill the courgette approximately 4 minutes on each side or until grill marks appear. Set aside to cool

put a tbsp of the mixture on each on the the courgettes, roll up and place on a serving plate. Garnish with the remaining passionfruit
