Oh yes, rhubarb! When I walked passed the vegetable shop and saw it, I could not withstand… it was too tempting… even though it is not really in season yet… So this rhubarb comes from the greenhouse. Which makes it really tender.
The sour taste of rhubarb goes really well with cinnamon, star anise and vanilla. So what more would it need? Apple, lemon zest and honey popped into my mind, and I decided to give it a go. And I can tell you, the smell in my kitchen was delicious… even before I tasted it. And about the taste? I think I do not have to convince you!
A little bit more about this delicious vegetable, yes vegetable not fruit! Rhubarb contains a lot of minerals, vitamins, organic compounds, and other nutrients that fit really well in a healthy lifestyle. Some of these components are dietary fiber, protein, vitamin C, vitamin K, B complex vitamins, calcium, potassium, manganese, and magnesium.
Rhubarb-apple sauce with honey
Delicious sour but sweet and spicy rhubarb-apple sauce with honey, lemon zest, cinnamon, star anise and vanilla
Ingredients
- 700 gr rhubarb
- 275 gr apple
- 2 cinnamon sticks
- 1 star anise
- 1 tbsp lemon zest
- 2 tsp vanille extract
- 6 tbsp honey raw
Instructions

Cut the rhubarb into 2 cm chuncks. Peel the apple and cut into small cubes. Zest 1 lemon

Add the ingredients into a pan and heat over a medium to low heat. Keep 2 tbsp of honey on the side. Bring to a boil and let it simmer until the rhubarb and apple are soft. This will take around 20 minutes. Taste it and add the additional 2 tbsp of honey if needed

Let it cool down a bit. Ones cooled down remove the cinnamon stick and star anise

For a vegan option, replace the honey with pure maple syrup
