How wonderful it is that when you open the fridge in the morning, a delicious healthy breakfast awaits you? Well, that is for sure the case with overnight oats. Oats are a so called health food, packed with dietary fiber, they are especially rich in beta-glucan, which is known to help lower levels of bad cholesterol.
Besides fiber they are rich in anti oxidants, B vitamins, magnesium, protein and iron. And they are gluten-free! But I think one of the most important benefits is that oats are great for keeping you full. They provide you with a long lasting energy, which to me is a great start of my day. On top of that, they are easy to prepare in many different ways. I like them cooked, baked, but especially soaked overnight. So I am very happy to share my recipe with you, so that next time you can open your fridge and something nice is waiting for you!
