pears poached in elderberry juice with cinnamon, ginger, orange and cloves
clean and peel the pears. You can choose to leave them in 1 piece or cut them in quarters and remove the core. This will reducing the cooking time
heat the elderberry juice, water (optionally), spices, orange peel and honey, until the honey is resolved
add the pears and slowly bring them to the boil, while you poor the juice over to give them an equal colour on all sides
when they boil, reduce the heat, put the lid on and let them simmer for 45 to 90 minutes. Turn them every 15 minutes and poor over the juice. If you use whole pears, it will take between 60 and 90 minutes. If you use quartered pears it will take between 30 and 45 minutes
