syrup from elderflower, lemon and honey

Ingredients

  • 20 elderflower umbels
  • 200 gr honey
  • 5 tbsp lemon juice
  • 1 1/2 lemon - peel
  • 1 litre water

Instructions

  1. boil 1 litre of water and add the honey. When the honey is resolved take it form the heat and add the lemon juice

  2. put the elderflower umbels and lemon peel in a pan and poor the honey lemon water on top. Stir carefully, lid on and let it cool down

  3. wait for a minimum of 48 hours, stir occasionally

  4. poor the syrup though a cheese cloth and use a funnel to put it in a sterilised glass bottle. Keep in the fridge. Serve with sparking water
