refreshing carrot salad with parsley, ginger and lemon

Ingredients

  • 250 gr carrot
  • 2 sprigs parsley
  • 5 gr ginger
  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 pinch pepper
  • 1 pinch salt

Instructions

  1. clean the carrots and finely grate them in your food processor. No food processor? No worries, grate them by hand

  2. finely chop the parsley and grate the ginger


  3. mix all ingredients together in a large bowl, use your hands if you like.

  4. carefully mix in the olive oil and lemon juice and season to your own taste with pepper and salt
