vegan pancakes, that are gluten free, made with buckwheat flour, banana and almond milk

Ingredients

  • 100 gr buckwheat flour
  • 1 tsp baking powder
  • 1/2 tsp vanilla powder
  • 1 tbsp coconut sugar
  • 1 tsp lemon zest
  • 125 gr banana very ripe
  • 2 tbsp coconut oil liquid
  • 125 ml almond milk unsweetened
  • 100 gr blueberries optional

Instructions

  1. mix the first 5 ingredients (flour, baking powder, vanilla powder, coconut sugar and lemon zest)

  2. put the banana, liquid coconut oil and almond milk in your blender and mix until smooth and well combined

  3. add the wet to the dry mixture and whisk until well combined. optionally add the blue berries to (part of) the mixture

  4. heat a small skillet, if needed grease with a bit of coconut oil, and bake the pancakes one by one
