A traditional Alsatian dish, also known as tarte flambee or Alsatian pizza. Nice and crispy and full off flavour. If you close your eyes you will find yourself wandering around the streets of the typical Alsatian village, Eguisheim, le plus beau village du monde. Flammkuchen has never tasted better!

Ingredients

  • 260 gr flammkuchen dough tante fanny
  • 125 ml creme fraiche
  • 3 figs
  • 50 gr red onion
  • 120 gr bettine blanc chevre
  • 10 gr hazelnuts
  • 3 sprigs thyme leaves only
  • 15 ml honey raw
  • pepper
  • salt

Instructions

  1. preheat the oven to 220 degrees Celcius (hot air oven). 

  2. cut the figs into quarters, slice the onion, crumble the goat cheese and roughly chop the hazelnuts

  3. spray you baking tray with cooking spray. This is a top I got from Tante Fanny: do not use the baking paper, but use cooking spray instead, for a nice a crispy dough! Spread the dough on the baking tray

  4. Spread the creme fraiche evenly over the dough

  5. Add the onion, goat cheese, figs and 3/4 of the hazelnuts and thyme

  6. Bake in the oven for 15 minutes or until golden brown

  7. Garnish with honey, the remaining hazelnuts and thyme, and some pepper and salt. Serve with a fresh green salad

Recipe Notes

If you want it to be even more festive, you can already divide the dough into 4 right after you put it onto your baking tray. This way everybody will have his own tarte flambee
