oven roasted pumpkin with thyme and goats cheese
- 1 pumpkin small
- 3 branches thyme
- 75 gr goats cheese soft
- 1 tbsp olive oil
- 1 pinch pepper
- 1 pinch salt
- 2 tsp pumpkin seeds
preheat the oven to 180 degrees Celcius
wash the pumpkin. cut in half and remove the seeds (you can leave the skin on). Then cut into 16 moon shaped pieces
marinate the pumpkin with olive oil, pepper, salt and half of the fresh thyme. Spread on a baking tray lined with parchment baking paper and roast in the oven for 15 to 20 minutes or until soft. Add 3/4 of the goat's cheese after 10 minutes
in the meantime roast the pumpkin seeds in a non-stick skillet until golden brown
take the pumpkin out of the oven and let it cool down a little bit. Garnish with the rest of the goat's cheese, pumpkin seeds, thyme and a little bit of pepper and salt.
