Peas, ever since I was a little girl I like them a lot. The sweet flavour, the crispiness , the looks… and also now that I am cooking a lot, their versatility. You can do so many things with them. And my little boy also likes them a lot! But today I wanted to do something different with them and as I had some cooked peas left over from dinner, I started to think. And then it popped up in my mind: pea dip. Great to eat with raw veggies, but also perfect on your sandwich. I thought it was worth giving a try and I have to tell you I am very happy with the result. I will be making this over and over again!

Pea spread with avocado, soft goat's cheese, lemon and mint
- 150 gr peas
- 70 gr avocado 1/2 avocado
- 50 gr soft goat's cheese
- 5 leaves fresh mint
- 2 tsp lemon juice
- 2 tsp olive oil extra virgin
cook the peas and let them cool down
put all the ingredients in your foodprocessor or (stand)blender and mix until well combined. Season to your taste with pepper and salt
