Sweet potato, I actually never liked them, until recently. I made the decision that from now onwards I would love them. And indeed, soup, mash, stew, I use them in a lot of my dishes. And today I made fries!
Fries is a dish we never prepare and we do not even have a fryer at home. But yes, we do have an oven and some sweet potato in stock. Great combination I would say! They are not as crispy as you would get them when frying, but the do not compromise at all on taste. Coming weeks I will be working on my skills to get them as crunchy as it can be. You will for sure be informed about that!
Sweet potato fits really well in a healthy lifestyle. They contain a lot of of fiber (mainly in the skin) as well as vitamin A (beta carotene), vitamin C, manganese other vitamins and minerals. They also contains riboflavin, phosphorus, vitamin E, vitamin K, calcium and iron.
Healthy oven baked sweet potato fries
Healthy oven baked fries made from sweet potatoes.
- 300 gr sweet potato 1 large one, skin on
- 1 tsp paprika sweet version
- 1 tbsp olive oil extra virgin
- 0,5 tsp garlic powder
- 0,5 tsp oregano dried
- 1 pinch sea salt
- 1 pinch pepper
preheat the oven to 200 degrees Celcius (hot air)
rinse the sweet potato and cut into fries. Season with the olive oil and spices and let it marinate for 10 minutes
Bake in the oven for 20 to 25 minutes. Turn around 1 or 2 times. Getting brown too quickly? Reduce the temperature to 180 degrees Celcius
