Chia seeds are a real superfood, high in anti oxidants, vitamines & minerals (calcium, potassium, magnesium), rich in omega-3 fatty acids, dietary fiber and protein. They go really well with a healthy lifestyle.
And good for you, you can put them in almost anything: seed crackers, nut bread, overnight oats, smoothie and of course Chia Pudding! But to be honest with you, I am not such a big fan of the structure of these seeds, so I have been reluctant to make chia pudding for a long time. But good news, I am passed that now. The answer is: put them in the blender. Result: a smooth, thick and creamy pudding, a perfect breakfast after yoga, or actually always!
I have topped it with my homemade raspberry rosemary cinnamon jam and over roasted honey cinnamon nuts… what topping will you put on your pudding?
Chia pudding with raspberry jam and caramelised nuts
A delicious thick and creamy chia pudding topped with home made raspberry rosemary jam and oven roasted honey cinnamon nuts. The pudding is vegan.
- 45 gr chia seeds
- 40 gr medjool dates
- 200 ml almond milk
- 50 ml coconut milk
- 0,5 tsp vanilla extract
- 0,5 tsp cinnamon ceylon
- 1 pinch salt
Deseed the dates and roughly chop them.
Put the chia seeds, dates, almond milk, coconut milk, vanilla, cinnamon and salt in a blender. Start on a very low speed and gradually increase the speed till you have a thick and creamy pudding. While blending stop several times to scrape down the pudding on the sides
Put the pudding in 2 jars and store it in the fridge for at lest 4 hours, but preferably overnight.
Choose your favourite topping to go with your pudding. I have chosen for raspberry jam and caramelised nuts. Topping in total is 124 kcal per serving (40 from the jam and 74 from the nuts)
The pudding without topping is 222 kCal
I have used regular unroasted unsweetened almond milk, but you can also use home made almond milk. Click on the ingredient to go to my almond milk recipe. This will be higher in calories as I have used hemp seeds to enrich it with protein.
