Vegan mayonnaise, to me that sounded like a contradictio in terminis, like a round square. And you, what are your first thought when you hear the words ‘vegan mayonnaise’?
A little video on BBC food got me very very curious… first of all again this vegan mayonnaise, but secondly… using chickpea liquid. Something I usually poured down the drain. So now all of a sudden, for me, this liquid has a purpose. I did not consider it any longer as waste. Now I was on this experiment, fully passionate, to make the best mayonnaise of my life. And I did. You cannot believe how incredibly good this taste. The only advice I can give you… try it!
But remember: moderation is key, so don’t eat the whole pot in 1 day 😉

- 3 tbsp chickpea liquid aquafaba
- 2 tsp dijon mustard
- 2 tbsp vinegar
- 250 ml sunflower oil organic
- 1 tbsp olive oil extra virgin
- 0,5 tsp salt
Put all the ingredients in a bowl and mix with a (hand) blender. There you go, that's it!
