Peas, I have liked them ever since I can remember. But only lately I have discovered how brilliant they are to make a good soup.
And then I do not mean the traditional Dutch ‘erwtensoep met worst’ (pea soup with sausage), but a fresh slightly sweet soup loaded with vegetables. What about you? What is your favourite way to prepare peas? I am curious if you like them as much as I do in this soup.
Pea soup with mint
A fresh vegetarian soup with peas and mint
- 3 tbsp olive oil extra virgin
- 50 gr shallots
- 400 gr courgette
- 300 gr peas frozen
- 8 gr garlic 1 large clove
- 7 gr fresh mint leaves only
- 1 tsp oregano
- 500 ml vegetable stock
Cut the courgette in small cubes. Finely chop the shallot, garlic and mint
Heat the olive oil in a soup pan. Fry the shallots for 2 minutes until translucent. Add the garlic and fry for another 2 minutes
Add the courgette and oregano. Stir well and fry for 2 minutes before adding the vegetable stock and peas. Bring to a boil and let it simmer for 10 minutes. Then add the mint and simmer for 5 minutes more.
Let the soup cool a little before you puree it with your (hand) blender. Add pepper and salt to your own taste.
Optionally garnish the soup with some (vegan) yoghurt, fresh mint and oregano
