Imagine yourself wandering around in a little ancient Italian village. Further along the road you hear the Italian mamas laughing. The smell of fresh tomatoes fills up the street. The only thing you want is to get there and see what is on the stove. So you walk, you run!
On the stove you see a big pot filled with freshly made tomatosoup. And yes, you will get offered a bowl… and yes, it is the best, most heartwarming, tomato soup you have ever tasted in your life. A memory you will take back home and a smell & taste you will never forget.
Imagine yourself in a little Italian village, with the best freshly made tomato soup you have ever tasted. Enjoy!
- 2 tbsp olive oil extra virgin
- 750 gr plum tomato
- 1 carrot
- 1 yellow onion
- 3 cloves garlic
- 70 gr tomato paste
- 1 tsp origan
- 1 tsp fresh thyme leaves only
- 2 cubes beef stock low sodium
- 750 ml water
- 1 tsp pepper freshly ground
Clean the veggies and finely chop the garlic and onion. Cut the carrot into little cubes. Dice the tomato into 4, removing the little green hard pieces. Pick the leaves of the fresh thyme
Heat the olive oil on a low to medium heat. Fry the onion for 2 minutes and then add the carrot and garlic and fry on a low heat for another 5 minutes. Let the veggies soften, not turn brown
Add the tomato paste, origan en thyme and fry on a medium to high heat for 2 minutes
Add the tomato, beef stock and water and bring to a boil. Put the lid on and let it simmer and a low heat for 15 minutes
Puree the soup and add pepper to your own taste. It will give you approx. 1.5 liters of soup
For a vegetarian and vegan version, replace with beef stock with vegetable stock
