It’s this time of your where it is cold and dark outside… the only thing you can think of is a bowl of warm thick soup filled with healthy veggies. Well, you do not have to look further, this sweet potato veggie soup is exactly what you need. Filled with pure ingredients and spiced up with some ground coriander and turmeric, it warms you from the inside out.

Loaded with veggies, this soup will warm you from the inside out
- 2 tbsp olive oil extra virgin
- 625 gr sweet potato
- 275 gr carrot
- 125 gr potato
- 150 gr sweet onion
- 150 gr leek
- 2 cloves garlic
- 2 tsp ground cumin
- 1 tsp ground turmeric
- 2 tbsp dried parsley
- 2 cubes low sodium vegetable stock
- 1250 ml boiling water
- 0,5 tsp pepper or to your own taste
- 0,5 tsp salt or to your own taste
Clean the veggies and chop into small pieces
Heat the oil on a medium heat. Add the onion and fry for 3 minutes. Add the garlic and fry for a little more. Then add the coriander and turmeric and fry for another 3 minutes, till it starts to smell delicious.
Add the leek and mix well. Fry for another 3 minutes
Then add the rest of the veggies (sweet potato, carrot and potato). Mix well before adding the veggie stock cubes, boiling water and dried parsley.
Bring to a boil. Then put the lid on and let it simmer for 30 minutes. Puree with a blender or hand blender. Season to your own taste with pepper and salt.
The soup a bit too tick for you? Simply add some extra water.
